hello!... I have passed by your place for years now, watching you grow. My husband and I kind of homesteaded (with a 9th and 10th grade daughter and son) out here starting in 96. I taught at Greenfield High school, and years later taught again in Spfld. (Central HS, driving daily past your land (before you were there). He built our timber frame home I live in, not a kit, the real deal. I live across from Theresa Johnson; I was the source of your elderberries! What did you do with the watercress? do you clean and eat it? it is highly nutritious and delicious, (especially with hot oil or bacon grease, and vinegar - like a wilted salad). I have grabbed some here and there over the years trying to get it growing in my creek (spring fed)..needs to be cold. The electric co. did some work and drove over mine this year. I have not gone down to the creek to see if it is surviving yet. I need to. I would love to have a start from yours if you are not using it yourselves. I share your love of outdoors, and cooking, preserving, writing, reading,, etc. the beauty of it all. Widowed and finally retired, I am daily working on my "farm" one way or another. I garden, can, preserve, etc. Come by sometime!
How nice to meet you, Linda! We have wanted to try eating the watercress as well, but we haven’t gotten around to figuring out how to prepare it! Last time, we left sections of it in the creek for that purpose, but this time we just pulled everything out and composted it. It had gotten big and started to flower, which is older than you want to eat it I think. You would be welcome to have a start next time we have some viable plants to move! I will look and see what’s left.
